A recent addition in our glamping recipe book is the Piri-Piri Barbecued Chicken from June’s issue of Canadian Living magazine.
It’s a huge hit at home, so we’re taking it glamping with us to PEI and we even made a double batch of the dry rub.
Don’t cheat with anything pre-mixed, it’s not nearly as good.
We’ve recommended this to a few friends and everyone has loved it.
It’s quick to marinate ahead of time, so for glamping, prep the chicken marinade a few days before, or even better, make a double batch at your next BBQ and freeze half of the chicken while it marinades in a large ziplock freezer bag.
Make your barbecue sauce the night before departure and you’re ready to go!
