On our recent glamping trip with Global TV at Dollar Lake Provincial Park, we scrambled some super-fun, super-easy, scrambled egg tortilla wraps and served them buffet-style. Do some of the prep work before you head out.

The kids chose their own toppings and went back for seconds.

It’s a one-hand, no fuss breakfast packed full of flavour:

Eggy Tortilla Wrap:

  • eggs for scrambling: scramble eggs how you like them. We go slow and easy with a little milk for creamy scrambled
  • green onion, pre-sliced (optional)
  • flat round tortillas
  • S&P
  • Hardware: bowl, whisk and fry pan

Cheesy Eggy Wrap Toppings:

  • grated Monterey Jack cheese
  • grated Asiago cheese
  • sliced Santini or cherry tomatoes
  • pre-washed arugula and spinach
  • sriracha sauce

Huevos con Frijoles Negros (eggs with black beans):

This is a throw back to my backpacking days in Costa Rica where I began each day with a serving of scrambled eggs with gallo pinto (black beans and rice). Here we skip the rice for a Central American twist on a brekie fave:

Ingredients:

  • eggs for scrambling
  • tin black beans: use up to 1 cup, depending on the size of your family
  • green onion, sliced
  • fresh cilantro, pre-washed and roughly chopped (the stems have great flavour so don’t discard them)
  • salsa and/or hot sauce like sriracha
  1. Saute green onion
  2. Scramble eggs in the same fry pan
  3. Stir in your drained and rinsed black beans
  4. Top and Roll:
    • chopped cilantro
    • salsa or sriracha sauce
    • dried chili flakes (optional)
