This is risotto made easy, in about 20 mins. and is a great glamping side-dish or double for a main.
- 1 onion chopped
- 1 tblsp. olive oil
- 2 tblsp. butter
- 1 cups plain rice
- 1/4c Dry white vermouth
- 2 1/2 c. chicken stock
- parmesan cheese
- Melt butter and oil in pot.
- Saute onion for 2 mins.
- Stir in rice for 1 min. until well-coated.
- Pour in dry vermouth & stock. Lid on, heat down. Cook 20 mins.
- Turn off heat. Stir in parmesan cheese and extra butter if desired. Lid on, 2 mins.
VOILA! Risotto rice fit for glampy campers.
