Caprese is a super easy side that I was happy to pull together last night while watching the girls rock pooling, listening to Rodrigo y Gabriella and sipping a Sauv Blanc.
Who said anything about roughing it?
What made it extra special was the huge basil leaves we brought from our market plant back home (should we have brought the leaves cross border?).
Top tomato slices with fresh basil and buffalo mozzarella a.k.a bocconcini cheese.
Drizzle with olive oil and S&P.
Voila! Easy glampy side dish.
